'Tis autumn. I love it! The chill in the air is a reprieve from those steamy hot summer days that make my hair curl uncontrollably and the dog not wanting to go outside. Fall is a time for change, as demonstrated when dark green leaves turn an indescribably beautiful spectrum of orange, red and gold.

And the food! How could I forget all of the unforgettable foods associated with fall? Pumpkin pie. Apple dumplings. Hot chocolate. Although some people might make the argument that some of these fall foods are not as healthy and are more sugar-laden than what we consume in spring and summer months, I beg to differ!

Servings Per Recipe: 1; Serving Size: 6 oz.

Ingredients:

  • 2 Tbsp. fat-free half-and-half
  • Dash ground cinnamon
  • 1 squeeze (0.25ml) SPLENDA ZERO Liquid Sweetener* or 1 tsp. SPLENDA® No Calorie Sweetener, Granulated
  • 3/4 cup hot brewed strong hazelnut flavored coffee
  • 2 Tbsp. thawed lite whipped topping

Directions:
Microwave first 2 ingredients in microwaveable mug on HIGH 15 sec. or until heated through. Stir in SPLENDA® and coffee. Top with whipped topping. *Nutrition information reflects the use of SPLENDA ZERO Liquid Sweetener

Cinnamon Oatmeal Apple Crisp Apple Crisp
Nothing says “fall” like warm apple crisp!
Servings Per Recipe: 2; Serving Size: 1 individual crisp

Ingredients:

  • 2 cups granny smith apples, peeled and chopped
  • 1 teaspoon cinnamon, divided
  • 6 packets SPLENDA® Naturals Stevia Sweetener, divided
  • 1/4 cup baking mix, heart smart
  • 1/2 cup old fashioned oats
  • 1/8 teaspoon salt
  • 1 tablespoon unsalted butter

Directions:

  1. Preheat oven to 375° F.
  2. Stir together apples, ½ teaspoon ground cinnamon, and 3 packets of SPLENDA® Naturals Stevia Sweetener. Set aside.
  3. Mix remaining 3 packets of SPLENDA® Naturals Stevia Sweetener, and ½ teaspoon ground cinnamon with baking mix, oats, and salt in a large bowl. Add unsalted butter and mix with a fork until incorporated.
  4. Place 1/2 of the apple mixture into an oven safe single-serve bowl. Top with 1/2 of the oat mixture. Repeat for second serving.
  5. Bake for 35-45 minutes.

And who can enjoy fall without these amazing autumn dishes – apple muffins and pumpkin bread pudding? Here are the recipes for all the taste but much less added sugar:

Miniature Apple Muffins Apple Muffins
Just the right amount of spice and a sprinkling of raisins give these bite-size muffins the robust flavor of an old-fashioned apple cake.
Servings Per Recipe: 36; Serving Size: 1 muffin

Ingredients:

  • 3/4 cup SPLENDA® No Calorie Sweetener, Granulated
  • 1 cup butter, softened
  • 2 teaspoons molasses
  • 2 large eggs
  • 1/3 cup frozen apple juice concentrate, thawed
  • 2 teaspoons grated fresh lemon peel
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup peeled, shredded fresh apple
  • 2/3 cup old-fashioned oats
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 400° F. Lightly spray miniature muffin pans with vegetable cooking spray; set aside.
  2. Beat SPLENDA® Granulated Sweetener, butter, and molasses at medium speed of an electric mixer 1 minute or until blended. Add eggs, one at a time, beating until blended after each addition; add apple juice concentrate and lemon peel, beating until blended.
  3. Combine flour, cinnamon, nutmeg, soda, and salt; add to SPLENDA® Granulated Sweetener mixture, beating on low speed just until blended. Stir in apple, oats, and raisins.
  4. Spoon batter into prepared pans; filling three-fourths full. Bake until edges are lightly browned, 12 minutes. Remove to wire racks to cool.
